Loaded Chicken Bacon Broccoli Potato Casserole

Ingredients – Serves 6
• Main ◦ 3 cups cooked chicken, shredded or diced ◦ 4 cups potatoes, diced into 1-inch cubes ◦ 3 cups broccoli florets, fresh or frozen ◦ 8 strips bacon, cooked and crumbled ◦ 2 cups cheddar cheese, shredded ◦ 1 cup mozzarella cheese, shredded • For the sauce ◦ 1½ cups heavy cream or whole milk ◦ 4 oz cream cheese, softened ◦ 1 cup chicken broth ◦ 2 tsp garlic powder ◦ 1 tsp onion powder ◦ 1 tsp paprika ◦ Salt and black pepper to taste ◦ 2 tbsp olive oil
Instructions
1. Prep the potatoes: Preheat oven to 400°F / 200°C. Toss diced potatoes with olive oil, salt, pepper, and paprika. Roast on a baking sheet for 20-25 min until golden. 2. Blanch broccoli: Steam or boil broccoli for 2-3 min until bright green but still crisp. Drain well. 3. Make the sauce: In a saucepan, whisk heavy cream, cream cheese, and chicken broth over medium heat until smooth. Add garlic powder, onion powder, salt, and pepper. Simmer 3-4 min until slightly thick. 4. Assemble: In a large 9×13 baking dish, layer roasted potatoes, cooked chicken, and broccoli. Pour sauce evenly over top. Sprinkle half the bacon and 1½ cups of cheese. 5. Bake: Bake uncovered at 375°F / 190°C for 20 min. Top with remaining cheese and bacon, then bake 5-10 min more until cheese is melted and bubbly. 6. Serve: Let it rest 5 min before serving. The cheese pull will be perfect!

• Make it faster: Use rotisserie chicken and microwave-steamed broccoli bags. • Lighter version: Swap heavy cream for half-and-half and use turkey bacon. • Extra flavor: Add 1/2 tsp ranch seasoning to the sauce.
