Hearty Lentil Vegetable Soup

 

*🟢 Ingredients –
*🟠 For the base:*
– 1 cup green/brown lentils, rinsed
– 2 medium potatoes, diced *🟡 yellow cubes*
– 1 carrot, diced *🟠 orange pieces*
– 1 onion, chopped *⚪ white*
– 2 cloves garlic, minced *⚪ white*

*🔴 For the broth:*
– 1 can diced tomatoes 400g *🔴 red*
– 4 cups vegetable broth
– 2 tbsp tomato paste *🔴 red*
– 2 cups spinach/kale, chopped *🟢 green*

*🟤 Seasoning:*
– 1 tsp cumin *🟤 brown*
– 1 tsp paprika *🔴 red*
– 1/2 tsp turmeric *🟡 yellow*
– Salt + black pepper to taste *⚫ black*
– 2 tbsp olive oil *🟢 green*

*🔵 Instructions –
1. *🟠 Sauté*: Heat olive oil in pot. Add onion + carrot 5 min till *🟠 soft*. Add garlic 1 min.
2. *🟤 Spice*: Add cumin, paprika, turmeric. Stir 30 sec till fragrant *🟤 brown smell*.
3. *🔴 Simmer*: Add lentils, potatoes *🟡*, tomatoes *🔴*, tomato paste, broth. Boil, then simmer 25 min till lentils *🟢 tender*.
4. *🟢 Finish*: Add spinach *🟢* last 5 min. It will wilt *🟢 dark green*. Season with salt + pepper *⚫*.
5. *🍞 Serve*: With crusty bread like in your photo!
