Purple Cabbage Blueberries
*Recipe 1: Purple Cabbage & Blueberry Infused Drink*
*Colors: Deep Royal Purple, Magenta, Violet*
*Ingredients: Makes 1.5L*
1. *Purple Cabbage*: 1/2 small head, chopped = about 3 cups
2. *Blueberries*: 1 cup fresh or frozen
3. *Water*: 4 cups, filtered
4. *Lemon Juice*: 2-3 tbsp, for flavor + color change to pinkish purple
5. *Honey or Maple Syrup*: 2-4 tbsp, optional, to taste
6. *Mint + Lemon Slices*: For garnish, like in the photo
*Instructions:*
1. *Infuse*: Add chopped purple cabbage and blueberries to a large glass jar. Cover with water. Let it sit at room temp for 30 min, or in the fridge for 2-4 hours. The water will turn deep blue-purple.
2. *Simmer*: Pour everything into a pot. Bring to a gentle boil, then simmer for 10 minutes. The color becomes much more intense, almost indigo.
3. *Strain*: Pour through a fine mesh strainer into a bowl to remove all cabbage and berry pieces. This is the step in the bottom-left photo.
4. *Sweeten & Brighten*: While warm, stir in honey. Add lemon juice last. The lemon will make the color shift from blue-purple to bright magenta/fuchsia.
5. *Bottle & Chill*: Pour into glass bottles like in the photo. Add a ribbon for that gift look. Chill for at least 1 hour.
6. *Serve*: Pour over ice in a tall glass. Garnish with lemon slices and fresh mint.
*Color Tip*: No lemon = blue/violet drink. With lemon = pink/purple drink. That’s the magic of anthocyanins in cabbage.

*Recipe 2: Sparkling Purple Cabbage Lemonade Mocktail*
*Colors: Bright Magenta, Lavender, Lilac*
*Ingredients: 1 Serving*
1. *Purple Cabbage Concentrate*: 1/2 cup, from Recipe 1 above
2. *Sparkling Water or Lemon Soda*: 1/2 cup, chilled
3. *Fresh Lemon Juice*: 1 tbsp
4. *Honey*: 1 tsp, optional
5. *Ice*: 1 cup
6. *Garnish*: Lemon wheels + mint sprig
*Instructions:*
1. Fill a tall glass with ice.
2. Add the purple cabbage concentrate, lemon juice, and honey. Stir.
3. Top with sparkling water. It will fizz and turn a lighter lavender color.
4. Garnish like the right side of your photo.
